Apple Cinnamin Bran Muffins
These are a great, healthy snack. Randall just loves them!!
Ingredients:
2 1/4 cup oat bran cereal (you can find this by the oatmeal)
1/4 cup brown sugar (I use brown sugar substitute)
1 1/4 tsp cinnamin (I just shake as much as I want)
1 tbsp baking powder
1/4 cup raisins (again, I add as much as I like, usually a cup)
1/2 cup skim milk
3/4 cup frozen apple juice concentrate
2 egg whites
2 tbsp vegetable oil (I actually used applesauce this time)
1 medium apple, cored and chopped
Mix all ingredients. Spoon evenly into muffin cups and bake for 17 minutes at 425. Store in a large plastic bag.
